Le 1er jour...
06 janvier 2009, je commence officiellement mon stage, après une grasse matinée je me prépare pour aller travailler.
J’embauche à 16h30,en chemise blanche et pantalon noir, prêt à travailler. Je retrouve Kyle, le plus jeunes de mes collègues barman, à moitié anglais, à moitié maltais. Il me décrit dans un anglais pas commun le travail de barman à l’hôtel Plevna et me dit que ce n’est pas bien compliqué. Malgré toutes ces explications, je me sentais inutiles. Puis Hector, mon second collègues, est arrivé pour prendre le relais du « night shift ».
La journée est divisé en deux partie : Day shift : 10h-17h et night shift : 16h30-24h30.
Avec Hector, cette sensation d’inutilité a diminué mais elle était quand même présente, il m’expliquait qu’il y avait deux types de clientèle et donc deux types d’alcool : les « All inclusives » , ces personnes ne paye pas l’alcool premier prix ou boisson que l’on leur sert, et les autres qui n’ont pas pris cette option et donc paye pour de la marque. Mais qu’elle soit All inclusive ou normal, la clientèle est 100% anglaise.
Donc les deux premières heures je me posais vraiment la question : « Pourquoi ai-je choisi ce stage ? » je me sentais inutile en regardant mon collègues. Puis mon collègue m’a pris en main et m’a expliqué…
Après ces longue, très longue heures d’apprentissage, me voilà barman et je commençais à servir la clientèle de l’hôtel, Gin, Whiskey, Vodka, Rhum, Malibu, Bière … des clients qui venait et repartait puis revenais et qui n’arrêtait pas de boire, normal c’est gratuit !!!! De la bière au vin mélangé avec du Sprite, j’apprenais des mélanges que je n’aurais jamais imaginer.
J’avais remarqué deux trois points :
- qu’entre 21 heures (après le repas) et 23 heures étaient le moment le plus intense où il y avait le plus de personne.
- même si je servais des verres très dosé, le client reviendra vite et en redemandera plus.
- et que la barrière de la langue n’était pas une grande difficulté.
Après 8 heures de travail, vers 24h30, je finis ma première journée de travail et me dit que je ne vais pas chômer dans ce stage …
I engage at 16:30, out of white blouse and black pants, ready to work. I find Kyle, young people of my colleagues barman, with half English, half Maltese. He describes me in English not common the work of barman to the hotel Plevna and says me that it is not quite complicated. Despite everything these explanations, I felt useless. Then Hector, my second colleagues, was able to take over “night shift”.

With Hector, this feeling of uselessness decreased but it was nevertheless present, he explained me why there were two types of customers and thus two types of alcohol: “Al inclusive”, these people does not pay alcohol first price or drink that one is useful to them, and the others which did not take this option and thus pay for mark. But that it is Al inclusive or normal, the customers are 100% English.
Thus the first two hours I put really the question: “Why did I choose this training period? ” I felt useless by looking at my colleagues. Then my colleague took to me in hand and explained me…After these long, very long hours of training, here me is barman and I started to serve the customers of the hotel, Gin, Whiskey, Vodka, Rhum, Malibu, Bière… of the customers which came and set out again then returned and which did not stop drinking, normal it is free!!!! Beer with the wine mixed with of Sprite, I learned from the mixtures that I would have never to imagine.
I had noticed three points:
- that between 9 p.m. (after the meal) and 11 p.m were the most intense moment where there was the most person.
- even if I served as glasses very proportioned, the customer will return quickly and will ask again some more.
- and that the barrier of the language was not a great difficulty.
After 8 work hours, around 24:30, I finish my first day's work and says to me that I will not be unemployed in this training course…
January 6th, 2009, I begin officially my placement, after a large sleep I prepare to go to work.
